# What You Need:

01 - 4 Italian sausages (mild or spicy, approximately 14 oz total)
→ Vegetables
02 - 1 lb baby potatoes, halved
03 - 2 bell peppers (red, yellow, or orange), sliced into strips
04 - 1 large red onion, sliced into wedges
05 - 2 cloves garlic, minced
→ Seasonings
06 - 3 tbsp olive oil
07 - 1 tsp dried oregano
08 - 1 tsp dried thyme
09 - ½ tsp smoked paprika
10 - ¾ tsp salt, or to taste
11 - ½ tsp freshly ground black pepper
12 - Pinch of red pepper flakes (optional)

13 - 2 tbsp chopped fresh parsley
14 - Lemon wedges
# Steps:
01 - Set the oven to 425°F.
02 - In a large rimmed baking sheet, toss halved potatoes, bell peppers, and red onion with olive oil, minced garlic, oregano, thyme, smoked paprika, salt, pepper, and optional red pepper flakes until fully coated.
03 - Spread the vegetable mixture evenly on the baking sheet and nestle the sausages amongst the vegetables.
04 - Bake for 35 minutes, turning sausages and stirring vegetables halfway through, until potatoes are golden and tender, and sausages reach an internal temperature of 160°F.
05 - Remove from oven and allow to rest for 5 minutes.
06 - Sprinkle chopped parsley and serve with lemon wedges if desired.
