07 - 1 tablespoon milk
08 - 1 tablespoon pure vanilla extract
→ Dipping Chocolate
09 - 6 ounces semi-sweet chocolate, chopped
10 - 1 teaspoon coconut oil or vegetable shortening (optional)
# Steps:
01 - Preheat the oven to 350°F. Line a baking sheet with parchment paper.
02 - Whisk together the flour, baking powder, and salt in a small bowl. Set aside.
03 - In a large bowl, cream the softened butter with granulated sugar until light and fluffy.
04 - Beat in the egg, milk, and vanilla extract until well combined.
05 - Gradually add the dry ingredients to the wet mixture, stirring just until incorporated.
06 - Using a teaspoon or small cookie scoop, drop small mounds of dough onto the prepared baking sheet, spacing about 2 inches apart.
07 - Bake for 12 to 15 minutes, or until edges are lightly golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
08 - Combine chopped chocolate and coconut oil (if using) in a microwave-safe bowl. Microwave in 20-second intervals, stirring after each until smooth.
09 - Dip half of each cooled cookie into the melted chocolate. Allow excess to drip off, place on parchment paper, and refrigerate for 10 minutes to set.
