Instructions

Step 1:
Pat the beef chuck roast dry with paper towels. Season all sides with salt and pepper.
Step 2:
Optional for extra flavor In a large skillet over medium-high heat sear the roast on all sides until browned about 3 4 minutes per side.

Place the carrots potatoes onion and garlic in the bottom of the slow cooker. Lay the seared or raw roast on top of the vegetables.

Step 5:

Cover and cook on LOW for 8 hours or HIGH for 5 6 hours until the beef is fork-tender and the vegetables are cooked through.
Step 7:
Remove the roast and vegetables to a serving platter. Stir the sauce in the slow cooker until smooth then spoon over the meat and vegetables.
Step 8:
Garnish with fresh parsley before serving if desired.
