# What You Need:

01 - 2 lbs (900 g) medium carrots, peeled and cut into sticks or left whole if thin
→ Glaze & Seasoning
02 - 3 tbsp olive oil
03 - 3 tbsp honey
04 - 1½ tbsp fresh thyme leaves (or 2 tsp dried thyme)
05 - 1 tsp sea salt
06 - ½ tsp freshly ground black pepper
07 - 1 tbsp fresh lemon juice (optional, for brightness)
# Steps:
01 - Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
02 - In a large bowl, whisk together the olive oil, honey, thyme, salt, and pepper.
03 - Add the carrots to the bowl and toss until evenly coated with the glaze.
04 - Spread the carrots in a single layer on the prepared baking sheet.
05 - Roast for 25–30 minutes, turning once halfway through, until the carrots are tender and lightly caramelized.
06 - Remove from the oven and drizzle with lemon juice if desired. Serve warm, garnished with additional thyme.
