# Steps:
01 - In a medium bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract. Whip with a whisk or hand mixer for 1 to 2 minutes until light and fluffy.
02 - In a separate bowl, gently toss mixed berries with lemon juice and sugar if using. Let sit for a couple of minutes to release juices and soften slightly.
03 - Divide half of the whipped yogurt mixture evenly among four serving glasses or bowls.
04 - Spoon half of the macerated berries over the yogurt layer, then repeat with remaining yogurt and berries to create distinct layers.
05 - Top each sundae with dark chocolate shavings and fresh mint leaves if desired.
