This creamy mushroom pasta quickly became my go-to meal whenever I want something satisfying yet simple to make.

Ingredients

  • Vegetables: 400 g (14 oz) cremini or button mushrooms, cleaned and sliced, 3 cloves garlic, minced, 1 small yellow onion, finely chopped, 2 tbsp fresh parsley, chopped (plus extra for garnish)
  • Pantry: 350 g (12 oz) dried pasta (such as penne, fusilli, or spaghetti), 2 tbsp olive oil, 900 ml (4 cups) low-sodium vegetable broth
  • Dairy: 120 ml (½ cup) heavy cream, 60 g (½ cup) grated Parmesan cheese (plus extra for serving)
  • Seasonings: 1 tsp salt (adjust to taste), ½ tsp black pepper, ¼ tsp dried thyme (optional), Pinch of red pepper flakes (optional)

Instructions

Heat olive oil:
Heat olive oil in a large, deep skillet or Dutch oven over medium heat Add the onions and sautée for 23 minutes until translucent
Add garlic:
Add the garlic and cook for 1 minute until fragrant
Cook mushrooms:
Stir in the mushrooms and cook for 56 minutes, stirring occasionally, until softened and lightly browned
Boil broth:
Pour in the vegetable broth and bring to a boil
Add pasta and seasonings:
Add the pasta, salt, pepper, thyme, and red pepper flakes (if using) Stir well, reduce heat to medium-low, and simmer uncovered for 1012 minutes, stirring frequently, until the pasta is al dente and most of the liquid has been absorbed
Add cream and cheese:
Reduce heat to low Stir in the heavy cream and Parmesan cheese until the sauce is creamy and the pasta is well coated
Finish and serve:
Remove from heat Stir in chopped parsley and adjust seasoning to taste Serve immediately, garnished with extra Parmesan and parsley
