Black Currant Popsicles (Printable Version)

Tangy and sweet frozen treats made with fresh blackcurrant juice, perfectly chilled for summer refreshment.

# What You Need:

→ Fruit Base

01 - 2 cups blackcurrant juice, unsweetened
02 - 1/2 cup granulated sugar
03 - 2 tablespoons fresh lemon juice

→ Optional

04 - 1/4 cup fresh or frozen blackcurrants

# Steps:

01 - In a small saucepan, combine blackcurrant juice and granulated sugar. Warm gently over medium heat, stirring constantly until sugar completely dissolves, approximately 3 to 5 minutes. Do not allow the mixture to boil.
02 - Remove saucepan from heat and stir in fresh lemon juice. Allow the mixture to cool to room temperature before proceeding.
03 - If using whole blackcurrants, divide them evenly among the popsicle molds to distribute texture throughout.
04 - Pour the cooled blackcurrant mixture into the molds, leaving approximately 1/4 inch of space at the top to allow for expansion during freezing.
05 - Insert popsicle sticks into each mold and freeze for at least 4 hours, or until completely frozen and solid.
06 - To remove popsicles from molds, briefly run the exterior of the molds under warm water and gently pull out the frozen popsicles.

# Expert Pointers:

01 -
  • They're genuinely simpler to make than you'd expect, with just a few pantry staples coming together in minutes.
  • The blackcurrant flavor is bold and complex enough that people ask if there's some secret ingredient involved (spoiler: there isn't).
  • Kids and adults both go wild for them, and there's something deeply satisfying about making frozen treats without any weird additives.
02 -
  • Don't skip the cooling step—pouring warm juice into molds will melt the plastic and your popsicles won't freeze properly, which I learned the embarrassing way.
  • If your blackcurrant juice seems too tart, the sugar amount is flexible; taste the cooled mixture before freezing and add more if needed, but resist the urge to oversweeten because that tartness is what makes them crave-worthy.
03 -
  • If your popsicle molds are plastic and seem to stick no matter what, try dipping them in a bowl of hot water instead of running them under the tap—the warmth penetrates more evenly and they release effortlessly.
  • Invest in molds with built-in sticks rather than separate ones; they freeze more securely and eliminate the fiddly moment of inserting sticks into liquid.
